Ingredients (serves 1)

  • 1 cup brewed Happy Gut Coffee (preferably medium roast, low acidity)
  • ¾ cup unsweetened almond milk (or any gut-friendly milk alternative)
  • 2 Tbsp pumpkin puree (not pie filling)
  • 1 Tbsp coconut cream (the thick top from a can of full-fat coconut milk)
  • ½ tsp ground cinnamon
  • ⅛ tsp ground ginger
  • ⅛ tsp ground nutmeg
  • Pinch of ground cloves
  • 1 Tbsp maple syrup or monk fruit sweetener (optional, adjust to taste)
  • ¼ tsp vanilla extract
  • A pinch of sea salt

Instructions

  1. Brew the coffee

  2. Heat & combine milk mixture
    In a small saucepan over low heat, whisk together:

    • Pumpkin puree

    • Coconut cream

    • Almond milk

    • Cinnamon, ginger, nutmeg, cloves, and salt

  3. Warm gently until steaming (don’t let it boil). Whisk until smooth and frothy.

  4. Sweeten & flavor
    Remove from heat and whisk in:

    • Maple syrup/monk fruit

    • Vanilla extract

  5. Assemble
    Pour the brewed coffee into your mug, then pour the pumpkin-spice milk mixture over top.
    Stir gently.

  6. Optional froth/topping

    • Froth a little extra Barista almond milk or coconut cream and spoon on top.

    • Dust with a pinch of cinnamon or nutmeg.
